TT Compounded Asafoetida 100 g is compounded hing, called kayam in Malayalam and hing in Hindi, from the TT brand, supplied as a solid block rather than a fine powder. Compounded Block Hing: Compounded asafoetida is raw asafoetida resin blended with a starch base to make it usable at home; the block form is strong-smelling and is scraped or crumbled a little at a time. Sambar, Rasam & Dal: A small piece dropped into hot oil or ghee with mustard and curry leaves lifts sambar, rasam, parippu curry and puli inji, adding a savoury depth that is hard to replace. Pickles & Poriyal: Goes into Kerala lime and mango pickle masala and into vegetable thoran and poriyal across South India.
